This 5 year old Belgian Owl was finished in its Pedro Ximenez cask for 146 days. A rich and complex single malt, this cask time allowed it to take on all the spice of the Spanish oak cask. Clearer than the first edition, the Spanish oak has taken over from the Pedro Ximenez Sherry, retaining the fruity and floral character of the Belgian Owl as well as the notes from the 5 years in first fill Bourbon cask. The aromas of vanilla, cinnamon and ginger are very present. A wonderful blend that combines the sweetness of Pedro Ximenez Sherry with the spice of Spanish oak.
