Elena Walch is among the top wine estates in Italy located in Alto Adige. Along with her two daughters, Elena Walch runs the family business and produces high-quality wines that garner international success. The Castel Ringberg and Kastelaz estates form the core of the vineyards, totaling approximately 55 hectares, all of which are single vineyards. Elena's two daughters, Caroline and Julia, have followed in their mother's footsteps and now run this fantastic winery with its own style of wines.
The Chardonnay "Cardellino" boasts an intense straw yellow color. A complex interplay of fruity aromas, orange and lemon zest, hints of linden blossom, abundant minerality, and a touch of spicy tobacco characterize the bouquet. This classic from Elena Walch convinces on the palate with its freshness and lively minerality, added by the limestone and clay-dominated soil, extending into an elegant, long, intense, and soft finish.
The Chardonnay "Cardellino" undergoes soft pressing of the grapes, followed by static decantation of the must. Fermentation takes place at a controlled temperature of about 20°C. After fermentation, the must remains in contact with the yeast for a long time. A portion of the must (about 15%) is fermented and aged in French oak barriques for 6 months.
Pan-fried sole or a dish with a cream sauce pairs excellently with this wine.
