250 years of wine history
In 1959 William Fèvre took charge of the family business and gave it a new name and a new impetus. Over the years, the estate has acquired new vineyards in Chablis, all located in the historic terroirs. William Fèvre has become one of the largest landowners in Chablis with 70 acres of prestigious vineyards, 15.9 of which are classified as Premiers Crus and 15.2 as Grands Crus.

Even with its 250 years of existence, William Fèvre has always been a domain that moves with the times and looks resolutely forward. Domaine William Fèvre came into the hands of Baron Lafite de Rotschild family in January 2024, where today the very passionate Saskia de Rothschild is at the helm. The respect and long-term vision for the Chablis terroir continues, just as founder and inspirer William Fevre had in mind. With the takeover of the Baron Lafite de Rotschild family, Saskia de Rotschild also made the decision to make only wines from their own vineyards in order to market 100% Domaine wines and no longer a negoce.
The steep, rocky slopes that stretch to the right and left banks of the Serein River are the birthplace of a history that spans more than one hundred and fifty million years. This is where the unique Kimmeridgian terroir, alternating between marl and marl limestone, gives Chablis its minerality and great freshness. These wine characteristics are envied worldwide and often imitated, but never matched.
Over the centuries, despite the phylloxera disaster in the late 19th century, Chablis has grown in reputation and exploited its natural qualities to become one of Burgundy's great vineyards.
Domaine William Fèvre works passionately to express the terroirs of Chablis, respecting the region's environment and traditional practices. The team works year-round with meticulous care and precision to achieve excellence and reveal the true characteristics of each climate.
In addition to upholding the deep-rooted values the family has always insisted on, the estate has managed to imbue its vineyards and wines with great vitality, thanks to modern technology and a resolutely avant-garde vision. With 70 acres and 90 individual plots, Domaine William Fèvre's vineyards enjoy both great complexity and incredible richness.
To preserve their environment, the vineyards are carefully managed. Limiting yields is a given and the vines have been grown organically for many years. The estate carries out the harvest by hand in small boxes, followed by rigorous sorting, and pays attention to every detail at every stage of the process.
Each terroir is incomparable, but as wonderful as it is, a terroir cannot fully express itself without the skill of man. At Domaine William Fèvre, everything possible is done, regardless of appellation, to achieve the essential character of Chablis.
In the cellars, the cellar master becomes a conductor who guides the wines according to the domain's requirements for quality and elegance. The domaine uses old barrels with an average age of 6 years rather than new oak, in order to preserve freshness and minerality and fully express the subtle nuances of Chablis' terroirs.
This careful process allows us to produce rich wines of great aromatic purity that retain their unique character and express the specific characteristics of each vintage.
Chablis is widely known for its unique personality and special minerality ... and among these "grands vins," those from Domaine William Fèvre are iconic.
More than half of the vineyards are classified as Premiers and Grands Crus: a white-gold hue and vibrant bouquet: fresh fruit, white flowers, citrus, beautiful minerality and incredible purity. On the palate there is an abundance of flavors, perfect balance and a unique expression of freshness and elegance.
