SOBR: refreshing non-alcoholic aperitifs with a bold twist
The birthplace of Domain SOBR does not lie in the rolling Tuscan hills of the Chianti region or the famous French vineyards of Bordeaux. For once, we don't have to look far: SOBR's non-alcoholic drinks are entirely Belgian and brewed in picturesque Bruges.
The duo behind SOBR, Milan & Simon, noted several years ago that there are hardly any quality non-alcoholic beverages with gastronomic potential. Existing nonalcoholic beverages are made without craft, lack complexity and must get their flavor mainly from adding sugar or carbonation. They are drinks with a flat, sweet taste that may be tasted as an aperitif, but are incapable of taking a meal to the next level. No non-alcoholic beverage yet existed that could pair as beautifully with a meal as wine.
"Gastronomic enjoyment, without the hangover" - Milan & Simon
Milan & Simon are both bioengineers by training, with a specialization in fermentation technology. During their training, they learned that the characterful and layered flavor we so appreciate in wine is due to fermentation. Fermentation transforms simple grape juice into a drink of the gods. Yeasts and bacteria convert grape sugar into alcohol and produce a symphony of organic acids and aromatic compounds. It is this diversity of compounds that creates the typical layered flavor.

Sparked by this realization, Milan & Simon got an idea: the development of a new fermentation process that provides layering and complexity without alcohol production. In this way, a dignified non-alcoholic alternative to wine could be created. With this idea, they went knocking on the doors of Ghent University and several sommeliers. These parties shared their enthusiasm and they decided to take on the challenge together. From the University of Ghent, they received help in working out the technological side, while the sommeliers in turn helped to fine-tune the flavors.
After more than two years of development, they managed to use state-of-the-art fermentation technology to develop a new fermentation process that delivered exactly what they were looking for. Juice is transformed into a layered, characterful beverage with a complex composition of organic acids and aromatic compounds. After a week of fermentation, hydrolates and infusions are added for finishing touches. Perfect for taking a meal to the next level!
